The Mulato Chile (Chile Mulato) is kin to the Ancho Chile. Both start as fresh Poblanos, however, Ancho chiles ripen to deep red before harvesting and drying, while Mulato chiles are fully ripened to dark brown. As a result of the longer ripening, Mulato chiles are spicier and smokier with richer dried fruit and chocolate notes.
