Hangtime refers to the average number of days grapes spend on the vine before we harvest them at the peak of ripeness. We source or Pinot Noir from the selected micro-climates where we can extend the ripening season to maximize hangtime and allow the grapes to develop as slowly as possible. This results in wines of balanced, deep fruit character, enhanced complexity and intriguing tannin structure. It's not the fastest way to go about winegrowing, but we understand that the finest things in life take a little longer.
